How do we get the distinctive Altos quality, flavour and mouthfeel

After 7-8 years, the agave plant reaches its prime maturity. Our Jimadores then carefully hand-crop the plant to harvest the heart of the agave, before delivering it to the distillery no more than a day later. It’s this carefully-controlled, traditional process, using the freshest produce, which results in the distinctive Altos quality, flavour and mouthfeel.
